Cascahuin Blanco Tahona
Cascahuin’s Tahona expression really shows off the Cascahuin brand’s commitment to making their tequila using traditional craftsmanship methods.
Cascahuin created their Tahona variety to give tequila-lovers around the world a special premium tequila who’s juices are extracted 100% by the Tahona wheel, allowing them to experience the delights of tequila as it was enjoyed centuries ago, before modern machinery was introduced and the rich flavours obtained by the Tahona-wheel-method were sacrificed for speedier production.
What Makes Cascahuin Tahona Special?
Most tequila producers use modern mechanical equipment to extract the ‘aguamiel’, the sweet juice from the cooked agave to be then turned into tequila, Cascahuin however, uses the time-tested, classical method of crushing the agave using a volcanic stone - the Tahona wheel - usually made of ‘volcanic basalt’, to make their Cascahuin Tahona Blanco.
The Tahona wheel was traditionally pulled by a horse, but being the animal-lovers that the Mexicans are, they’ve switched to using a machine to pull the big, heavy rock. It’s a slower process that needs more work, but the outstanding tequila we’re left with has more unique flavours and textures.
Aside from the Tahona wheel, Cascahuin uses even more traditional tequila-producing methods to make their Cascahuin Blanco Tahona Tequila. The distillery sets itself apart from other tequila producers by using copper pots in the distillation process. While other producers use stainless steel for the lower cost and easier maintenance, Cascahuin uses copper stills. Copper is a superior heat conductor, this additional heat positively impacts the distillation process, the result is a sweeter flavoured tequila in comparison to the use of stainless steel pots.
Cascahuin ensures their Tahona is high quality, pure, and abundant in flavour by using water from a deep spring well. Aside from using a clean and purified water source, the slow filtration through rock and soil leaves it with minerals such as calcium and magnesium which add a subtle extra flavour to the tequila.
The Cascahuin distillery prides itself on being preservative, artificial sweetener and additive free. It really is a pure, high quality tequila!
